Healthy Nuggets!

Every once in a while you crave some child-like food, like some good ole chicken nuggets.  So I found a recipe for making some healthy baked nuggets.  I got the idea for the recipe from Gina’s Skinny Recipes and the original recipe can be found here.  Below is the one I concocted.

Ingredients:

  • 2 chicken breast
  • almond meal – found by all the grains/specialty flour in your grocery store
  • paprika
  • italian seasoning
  • rosemary
  • oregano

Preheat oven to 400 degrees F.  Cut both chicken breast up into equal size chunks/nuggets, remember to cut off any fat on them as well.  Pound the chicken with a mallet so that all of the chicken is around the same thickness.  Then combine the almond meal, paprika, italian seasoning, rosemary, oregano, and any other herbs you want to include in a bowl and mix.  Dip/roll the chicken nuggets in the mixture and place on a lightly oiled pan.  Place in oven for 10 minutes then flip nuggets and place in oven for another 8-10 minutes.  Then serve with your favorite dipping sauce.  I used some honey mustard and ketchup.  MMM good!
