Shrimp Stirfry

Hello Ladies and Gentlemen,

Hope you all are well.  I decided to blog my concoction that I make for stirfry.  It’s super easy and can be tweaked to your likings as well!  I normally switch out or change the ingredients every time, but I tend to use the same seasonings because it always turns out good.

Ingredients:

  • 1-2 lbs. of shrimp (or another lean meat – if I don’t use shrimp I’ll use chicken, pork, or steak, or even combine a couple of meats in there)
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 2-3 garlic cloves minced
  • 1 can of water chestnuts
  • 1/4 a bag of frozen corn
  • 1/2 a container of fresh mushrooms
  • 10 stalks of asparagus (optional)
  • 2 tsp ginger
  • 1-2 TBSP light soy sauce
  • 1 spoonful of oyster sauce (found in the chinese section at your local grocery store)
  • 1 cup of quinoa

Directions:

Get out a pan you would cook rice in and put water in it and bring to a boil.  Once to a boil add in the 1 cup of quinoa and cook as directed on the package (very similar to cooking rice).  Get out a wok pan or larger frying pan and lightly spray with olive oil and then cook meat on medium or medium high til’ it’s done.  While the meat is cooking chop up the peppers, onion, garlic, asparagus, and any other vegetables you may want to add.  Then add them to the pan along with the remaining ingredients.  Cook/stir until all ingredients are nice and hot and also allow sauce to thicken a bit.  Then when it’s done remove from heat, add the quinoa and stir it up!  Enjoy! :)  There will be lots of leftovers too if you’re cooking for two, but it reheats very well!
