Here is another simple salad recipe that I got the idea from one of panera’s salad. I enjoy it from Panera, but would rather make my own at home. It’s a lot cheaper and healthier when you make your food from home. Especially cuts down on all that sodium intake by using fresh ingredients.
- corn, roasted
- red/green pepper, finely chopped
- black beans
- red onion, finely chopped
- bbq sauce
- fat free ranch dressing
- 4-6 ounces grilled chicken
- tortilla strips (optional) – leave out if you want this to be a healthy salad
Same as all the other simple salads. Grill your chicken and then chop it into small pieces. Roast your corn, onions, black beans, and peppers. You can do this by putting it in a frying pan with or without a little olive oil. And leave in there til corn is nice and browned on edges. Put romaine in a bowl and toss veggie blend, chicken, and tortilla strips. Then drizzle with bbq sauce and ranch. If you want you can also marinade your chicken in bbq sauce too.
