Chicken Rollatini with Spinach alla Parmigiana

So last night I tried a new recipe I found on pinterest.  The recipe came from Gina’s Skinny Recipes.  It did take a while to prepare, but the end result was great!  I’m not going to lie I was a little confused by the recipe at parts so I’ll break it down for you, how I ended up doing it.

Ingredients:

  • 4 chicken breasts (half them the long way)
  • 1/2 cup whole wheat italian seasoned breadcrumbs
  • 1/4 cup of parmesan cheese, divided in recipe
  • 6 tablespoons of egg whites or egg beaters (I used egg beaters)
  • 5 oz of spinach, chopped up finely
  • 6 oz part skim mozzarella
  • 6 TBSP part skim ricotta cheese
  • olive oil non-stick spray
  • 1 cup of your favorite spaghetti or marinara sauce (used my homemade marinara that’s posted on here)

Directions:

Preheat over to 450 degrees F.  And lightly grease glass pan with spray.  Then the first thing I did was cut all the chicken breasts in half, the long way, so that they’re thin.  Then I took a wooden spoon to beat them to try to flatten them out as best as I could.  Then in a smaller bowl combine breadcrumbs and 2 TBSP of parmesan cheese.  In another smaller bowl set aside 1/4 cup of egg whites/egg beaters.  In another bowl combine 1.5 oz of mozzarella, ricotta, chopped spinach, rest of parmesan cheese, and 2 TBSP of egg beaters/egg whites.  Lay chicken breasts out on table and take about 2 TBSP of the spinach/cheese concoction and spread over one side of the breast.  Loosely roll, dip in egg whites, and roll in breadcrumbs and place seam down in glass  pan.  Repeat with all chicken breasts.  Then bake for 25 minutes.  While this is baking, make your marinara sauce.  After 25 minutes is up top chicken with marinara and more cheese if desired.  Bake until cheese on top is melted.  And then ENJOY! :)
