Chicken/Shrimp Fajitas… Comingtoyaaaahaaaa!

Sorry that I’ve been gone for so long… just been swamped with stuff and haven’t been doing as much adventurous stuff in the kitchen, not that I do that often anyway.  Lol.  Well, the other week my husband and I made one of our go to meals when we’re craving some mexican, FAJITAS!  You can never go wrong with these!  They’re always simple and delicious.  Below is normally how I make our fajitas.


  • chicken (or any other meats you would like to use… I also like to use steak and shrimp..mmm)
  • shrimp
  • red pepper
  • green pepper
  • onion
  • mushrooms (optional)
  • one fajita packet (or if you want you can combine these seasonings: cayenne pepper, garlic powder, onion powder, paprika, chili powder, and cumin)
  • tortillas
  • salsa
  • mexican cheese
  • sour cream or greek yogurt (optional)

Directions: So there are two different ways to make these, you can do them in a big stirfry pan on your stove or you can grill them.  We decided this time around to grill them.  So we stuck all the veggies in a ziplock with a little spritz of olive oil to help the seasoning stick and poured in some fajita seasoning.  Then take the meat you’re going to use and put in a separate ziplock and do the same thing. Shake em up for a bit and then let sit for a bit.  Fire up the grill and put veggies in tin foil or a grill basket (need to invest in one of these, they are sooo handy!)  and then put meat on the grill.  At the end combine all together.  Put in a tortilla and add your cheese, salsa, and sour cream/greek yogurt for a tasty and filling meal!
