Revamping Leftovers to create a Steak Sandwich

Hey Everyone,

As I posted in my last post I like to reuse my leftover food in different ways, so that I don’t get sick of eating the same thing over and over.  So the other night I still had some delectable sirloin left over.  Many thoughts went through my head.  Steak and eggs?  Steak omelet? Steak pasta?  Another steak stirfry?  And I finally settled on steak sandwich… yes that sounds like it would satisfy my growling stomach.  Since I’m moving I’m trying not to buy too much for groceries I’m limited on what’s in my fridge/pantry.  I found some sun-dried tomato pesto and thought that sounds delicious.  I also keep pesto and/or sun-dried tomato pesto on hand at all times because they add some great flavor with not a lot of work.  Here’s what I piled on a toasted bun:

  • sirloin (already grilled and thinly sliced)
  • spoonful of sun-dried tomato pesto
  • a nice sprinkle of italian cheese

Seriously that was it and then I had some veggies on the side to make my meal.  How simple?  If you can’t handle making that, well then I don’t know what to tell you.  Enjoy! :)
