Southwestern Quinoa Salad

Hey everyone!

So Monday evening my husband and I invited a couple of friends over for dinner.  We decided to make some fajitas and then I was debating what else to make.  I found a recipe for Southwestern Quinoa Salad and all the ingredients sounded like something I would like.  So I put it together and it was delicious.  I highly recommend this as a side dish anytime and it’s a pretty darn healthy dish as well.  Below is the recipe I followed, which I found at Kalyn’s Kitchen!


For the salad:

  • 3/4 cup quinoa (rinsed if needed, check the package)
  • 1 1/2 cup water
  • 1/2 tsp. salt
  • 1 red bell pepper, chopped into small dice
  • 1 can black beans, rinsed and drained
  • 1/2 cup thinly sliced green onion
  • 1/2 cup chopped fresh cilantro

For the dressing that goes on the salad:

  • 2 T fresh-squeezed lime juice
  • 1 tsp. ground cumin
  • 1/2 tsp. cayenne pepper
  • fresh ground black pepper to taste
  • 1/4 cup extra-virgin olive oil

Directions:  Make the quinoa as directed on the package.  Normally it’s double the amount of water of the amount of quinoa.  Bring water to a boil and then add quinoa.  Cooks very similar to rice.  Then let it cool.  Add all your salad ingredients together and mix.  Then in a separate bowl combine dressing ingredients and mix.  Pour dressing concoction over salad.  You do not need to use all of it… Just enough to cover the salad.  It’s so simple and delicious… hope you guys enjoy it! :)
