Pad Thai Stir Fry

Hey everyone,

I am a big fan of stir fry because they’re easy, delicious and always reheat well!  So last night decided to do a Pad Thai stir fry.  Nothing too complicated because I bought the Pad Thai sauce instead of creating my own.  I know, this isn’t right, but a lot of the stuff you put into the sauce I wouldn’t use very often and it was just easier!  It turned out really well though and would definitely recommend it to anyone!  And you can easily take out or add any type of veggies that sound good to you in this recipe.  Here is the simple recipe:

Ingredients:

  • 1/2 lb of shrimp
  • 1 cup of quinoa
  • 3 eggs
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • water chestnuts, chopped
  • mushrooms
  • carrots, chopped
  • 1 TBSP garlic
  • 1 TBSP olive oil
  • 1 tsp of ginger
  • Pad Thai sauce

Directions:  First I sprayed the pan with a little bit of olive oil then added the 3 eggs.  Let them cook and made sure they were a scrabbled consistency.  Then added the shrimp and oil and garlic.  Let that simmer and cook for a bit.  Then I added all of the veggies and mixed it around.  As this was happening I cooked the quinoa in a separate pan.  It cooks just like rice.  Twice the amount of water as the amount of quinoa.  Bring to a boil and then turn down and cook til it’s absorbed all the water.  Once the quinoa is done I added it to the stir fry along with the pad thai sauce.  Let it simmer for about 15-20 minutes to really let the flavor get in and stir.  Then wahla,  Pad Thai Stir Fry!  Enjoy! :)
