Chicken Lo Mein

Hey everyone,

As many of you know I like to try new recipes all the time because I get sick of making the same thing every week.  I need to spice it up.  So last week I made a couple of asian dishes and chicken lo mein was one of them.  I found both recipes on pinterest.  It definitely trumped the General Taos Chicken, which surprised me because it had less ingredients and was super easy!!!  Here’s the recipe… ENJOY! :)


  • 8 oz of lo mien noodles or thin spaghetti (I was unable to find the lo main so had to use spaghetti noodles :()
  • 2 TBSP of sesame or olive oil
  • 2 breast or 1 lb of chicken breast
  • 1 red bell pepper chopped
  • 1/2 onion chopped
  • 2 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3 TBSP rice wine vinegar
  • 3 TBSP of light soy sauce
  • 1 TBSP ginger

Directions: Prepare noodles according to package.  Cook chicken in 1 TBSP of oil and then set aside when chicken is cooked through.  Add other 1 TBSP of oil and cook onions, peppers, and garlic.  After they sauté for about 5-8 minutes add in the chicken broth, rice wine vinegar, soy sauce, and ginger.  Let that cook for a couple minutes then add back in the chicken and add the noodles.  Stir occasionally til noodles soak up all the yummy goodness and eat!  Hope you guys give this one a try and like it!
