Crockpot Southwest Chicken

Hey everyone!

I am a big fan of southwest recipes.  I always know that I’m going to like them because I love the combo of black beans, corn, and salsa.  I mean where can you go wrong.  And this recipe is great because it cooks all day in the crockpot!   Hope you all give this a try!  *Warning: if you don’t have a big family you will have a lot of leftovers!

Ingredients:

  • 2 cans of black beans, drained/rinsed
  • 1 can of reduced sodium chicken broth
  • 1/2 pound of boneless chicken breast
  • 1 jar of chunky salsa
  • 1 cup of corn
  • 1 TBSP parsley
  • 1 tsp cumin
  • 1/4 tsp black pepper
  • 2 TBSP of southwest seasoning (Penzey’s makes some delicious seasonings)
  • 1 cup of quinoa

Directions:

In a crock pot put all ingredients except the quinoa into the pot.  Cover and cook for 6-8 hours.  Then shred the chicken with two forks.  Cook quinoa as it says on the package and serve with the crock pot of goodness. Enjoy! :)
