Fish Tacos! mmm!

Hey Everyone,

So got back from vacation early Monday morning and after finally picking up some groceries on Tuesday decided to make fish tacos for dinner, since we definitely did not get enough seafood while in Costa Rica.  Lol.  But I decided to try something different and make my own salsa, a cabbage salsa.  And then as a side I made Southwest Quinoa salad, which I blogged before here! Below is the rest of the recipe!

Taco ingredients:

  • fish – I used tilipia
  • Penzey’s Southwest Seasoning
  • Penzey’s Jerk Seasoning
  • tortillas
  • shredded cheese
  • greek yogurt – instead of sour cream, much healthier and tastes the same
  • cabbage salsa (recipe below)
  • lettuce – if you like
  • guacamole – if you like

Directions: Prepared quinoa salad and cabbage salsa a couple hours ahead of time.  Then for the fish put a little olive oil spray in a pan on the stove and heated at medium.  Sprinkled on the Penzey’s Jerk and Southwest seasonings.  Cooked and chopped up fish.  About 2-3 minutes each side.  Then put everything together to make your taco!  Instead of eating the quinoa salad on the side we added into the taco because we had big tortillas.  It was delicious!!!  Making shrimp tacos tonight with all the leftover stuff!

Cabbage Salsa Ingredients:

  • 8 plum tomatoes (I ended up buying a few roma tomatoes instead), finely diced
  • half a red onion, diced
  • 1/2 red cabbage head, finely diced
  • 3 TBSP cilantro, chopped
  • 1 garlic clove, minced
  • 1 jalapeno pepper, diced
  • 2 limes, juiced
  • a pinch of salt
  • a pinch of sugar

Directions: This is super easy, just combine all of the ingredients, stir, and let it sit for a couple hours before eating! Also great with chips!  Hope you all enjoy! :)
