Blueberry Muffins? YES PLEASE!

Hey everyone,

So I have officially been eating strict paleo now for 10 days!  Like I said before, I was always skeptical of that nutrition plan and didn’t think it would ever suit me.  But honestly, I can say I don’t feel bloated or lethargic like I normally do.  I feel clear and more energized and just good.  Never thought I would be an advocate for paleo, but I guess I understand now why people like eating this way.  Anyway… I have been experimenting with new recipes and one thing that I miss having are blueberry muffins.  I work at a coffee shop a lot and tend to snag one while I’m there, so I needed to find a recipe that could fit into my new nutrition/30 day paleo reset. I found this wonderful recipe and obviously cooking without normal flour does change the texture a bit, but these are absolutely delicious!  I found the original recipe at Paleo Cupboard (great place for paleo recipes!).

Ingredients:

  • 1 cup almond flour
  • 6 TBSP arrowroot powder
  • 1/4 tsp sea salt
  • 2 tsp vanilla extract
  • 1 large egg
  • 1/4 cup honey, melted
  • 1/4 cup coconut oil, melted
  • 1/2 cup blueberries

Directions:  Preheat of to350F.  Mix dry ingredients (minus blueberries) together in a medium bowl and mix wet ingredients in another bowl.  Combine in one bowl.  Once mixed well fold in blueberries.  Put in your muffin tin and pop it in the oven for 20-25 minutes!  This only makes 6 muffins, so I would recommend a double batch cause I was kind of sad once I ate one and realized there were only 5 left. Lol.  This is so good and if you go to the link above (Paleo Cupboard), there is an optional crumb topping that I didn’t add.  Hope you all give it a try! Enjoy! :)
