Breakfast is served: Lemon Poppyseed Waffles


In our household we believe breakfast food can be served any time of day and why not?  Only the best types of food are served at breakfast: eggs, bacon, sausage, waffles, pancakes, muffins, croissants, the list could go on and on…  And I’m a huge fan of pancakes and waffles so I’m always searching for new recipes.  This past weekend I made lemon poppyseed waffles and they were delicious!  I found this scrumptious recipe at PaleOMG.  I will say though, I have yet to find a pancake recipe that beats this beer pancake recipe!  Give both of these a try when you’re craving something sweet!

Prep Time: 15 minutes
Cook Time: 2 minutes a waffle
Serving: 2 waffles on my waffle iron


  • 1/2 cup almond flour
  • 1/3 cup coconut flour
  • 1/2 tsp poppy seeds
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/3 cup butter, melted
  • 4 eggs, whisked
  • 2 lemons, juiced
  • zest of a lemon
  • 1-2 TBSP honey


  1. Heat up your waffle maker.
  2. Mix together all of the dry ingredients.
  3. Mix together all of the wet ingredients.
  4. Mix ALL together.
  5. Pour batter into waffle iron.
  6. Cook until nice and brown.
  7. Top with some syrup or whip cream or jam or whatever you like
